Happy National Watermelon Day! To celebrate, I created a twist on classic sorbet - tasty popsicles. I knew that watermelon would be a sweet flavor, so I wanted to add a little something to the mix; that's how I chose a hint of pineapple. This was my first time making sorbet and let me tell you, it was so simple! And even better, so refreshing. In the kind of heat we've been having lately, refreshing is the best kind of dessert.
WHAT YOU'LL NEED:
PINEAPPLE SORBET
1 container fresh pineapple chunks (about 32oz)
5 tablespoons sugar
¾ cup water
WATERMELON SORBET
1 container fresh watermelon chunks (about 64oz)
1 cup sugar
1 cup water
2 tablespoons lemon juice
HOW TO MAKE IT:
1. Place pineapple chunks in blender.
2. Pulse until pineapple is broken up.
3. Add in sugar.
4. Add in water and blend until smooth.
5. Pour mixture into popsicle mold, about ¼ full.
6. In small pan, bring water and sugar to a boil until dissolved.
7. Pulse watermelon chunks in blender.
8. Add in sugar mixture and lemon juice.
9. Blend until smooth.
10. Pour mixture into popsicle molds until full.
12. Add in popsicle sticks (or lid, depending on mold).
13. Freeze for at least two hours.
I had leftover pineapple and watermelon mixtures, so I chose to freeze them for some simple sorbet.
