Is there anything better than hot soup on a chilly winter night? I didn't think so! In honor of National Homemade Soup Day, I thought I'd share a new recipe I found from The Mommy Bunch. It combines two of my favorite things: a crockpot and corn chowder.
WHAT YOU'LL NEED:
a crockpot
5 cups diced potatoes
¾ cup diced onion
1.5 cups diced ham
1 can creamed corn
1 can whole kernel corn
2 cups chicken broth
¼ cup butter
1 cup half-and-half
1 cup milk
HOW TO MAKE IT:
1. Add your potatoes, onion, ham, corn, and broth into the crockpot.
2. Cook on low for 7-8 hours.
3. Add in butter, half-and-half, and milk.
4. Cook on high for 30 minutes.
I chose to keep my soup with the full potato chunks, because that's how I like it, but you can always mash up your mixture once cooked to create the consistency that you like.
